A Little French with your Football

There are few things more comforting than an authentic French Onion Soup – slowly cooked, caramelised onions that turn mellow and sweet in a broth laced with white wine and Cognac. The whole thing is finished off with crunchy baked croutons of crusty bread topped with melted, toasted cheese. How delectable is that?
My fellow traveler, House of Beauty and Culture, posted this wondrous recipe for French onion soup recently that I’ll be making in honor of super bowl Sunday this weekend. Yes, the game is on and like our newly elected president my heart is with the Steelers. The recipe comes from Delia Smith. I wholeheartedly concur with HOBAC’s additions of a sprig of fresh thyme and the always reliable bay leaf. Perfect fare for the cold and hungry. We tired of chili and nachos several seasons ago re: super bowl Sunday so this could become the new staple. Hearty soup coupled with huge hero type sandwiches of fresh meats, cheeses and vegetables stacked between crusty artisan breads. Go steelers!
